Chef Grant McPherson, from Rhubarb Food Design, who is overseeing the menu, said: “The vegetables are all seasonal and the souffle is quite heavy so the garnishes are very light and colourful to complement it.

“The whole menu flows together so the chicken will follow on nicely.”

Julien Thevenot, the executive pastry chef for Rhubarb, added: “I chose the best chocolate for the dessert, it’s really smoky and I married it with raspberries for freshness.

“It’s a really fresh dessert even with the chocolate and olive crumb so it’s quite surprising.”
